  • 5 Idlis use any idlis of your choice
  • 3 tbsp Maida / all-purpose flour
  • 3 tbsp Corn flour / corn starch
  • 1/2 tsp Red chilli powder
  • 1/4 tsp Black pepper powder
  • Salt to taste
  • Coriander leaves chopped
  • Oil for deep frying
  • 1/2 cup Onion chopped
  • 1/2 cup Capsicum chopped
  • 1/2 tsp Ginger finely chopped
  • 1/2 tsp Garlic finely chopped
  • 1 tbsp Oil
  • 2 tbsp Schezwan chutney
  • Water as required to prepare smooth batter


  1. Chop all the idlis into 4 quarters and keep aside.

  2. In a large bowl mix together take maida,corn flour,red chilli powder,black pepper,salt give a good mix.

  3. Now add little water and mix well. make a smooth batter. the batter should be of dropping consistency.

  4. Dip each idli pieces into the batter. coat them well and deep fry.

  5. Flip over and fry till they turn light golden brown and crispy.

  6. Drain the fried idlis on a kitchen paper towel to remove excess oil.

  7. In a pan add 1tbsp oil, chopped ginger, garlic and saute for few seconds.

  8. Next, add chopped onion, capsicum and saute well.

  9. Add 2 tbsp of schezwan chutney and give a good stir. 

  10. Now add the deep fried idlis and give a good mix. coat the idli pieces well with schezwan chutney.

  11. Lastly add some chopped coriander leaves and mix.

  12. Serve hot  

Recipe Notes

  • I have used idli prepared with idli rava, however; you can use any leftover idlis.
