Ingredients

  • 3 tbsp butter
  • 4 cloves garlic
  • 1/2 bay leaf
  • 1/4 tbsp pepper
  • 2 tbsp onions chopped into small pieces
  • 1/2 carrot chopped into small pieces
  • 6 cubes beetroot
  • 500 grams tomato chopped into small pieces
  • 1 tbsp sugar
  • 2 tbsp salt
  • 2 cups water
  • 2 slices bread Optional

Instructions

  1. The very first step is to add 2 tbsp butter on a moderately hot pan, add 4 chopped garlic cloves along with a 1/2 bay leaf and 1/4 tbsp of pepper. After a quick mix, add 2 tbsp of onions chopped into small pieces. Now keep the stove on the medium flame and fry till the raw smell disappears.

  2. Add 1/2 of carrot chopped into small pieces and 6 cubes of beetroot and fry for 2 minutes on the medium flame.

  3. Now add 500 grams of Sweet/ Diamond tomatoes and give it a good mix.

  4. After mixing, add 1 tbsp of sugar and salt to taste and mix along with almost 2 cups of water.

  5. Now cover the lid and boil until the tomatoes get soften.

  6. Close the lid and allow it to cool.

  7. Meanwhile, the next step is to roast the bread. For that take a pan and spread 1 tbsp of butter on it. Keep the bread slices on it with the cutting edges and roast on both sides equally. Turn off the flame and rest the slices on the same pan, so that they become crispy and crunchy.

  8. Now take the cooled mixture and put it in a blender jar along with the water and make a fine puree.

  9. Take the same pan and sieve the puree with the help of a spoon. You can also use your hands to make the process much easier and better.

  10. Keep the Pan on the stove and adjust the puree for pepper and salt, if it's necessary and also check its consistency for water. Mix it well and boil for 2 minutes and turn off the flame.

  11. Make small pieces of the bread like this and add milk cream if it's available. Put a small piece of mint leaf to garnish.

  12. The Tomato Soup is ready to serve hot.

Recipe Notes

  • Adding beetroots will add more taste and gives color like a restaurant made.
  • Add sweet tomatoes instead of regular tomatoes, because its the main ingredient and gives a special taste.
  • Adding milk cream is optional.
