Ingredients

  • 1.5 cup dosa rice
  • 1 tbsp gram
  • 1 tbsp Toor daal
  • 1/4 tbsp fenugreek
  • 1/2 cup urad daal
  • 1/2 cup flattened rice/ poha
  • 1 tbsp Bombay rawa
  • pinch sugar
  • 3 tbsp oil
  • 1 tbsp red chutney optional

Instructions

  1. Take a bowl and add 1.5 cups dosa rice, 1 tbsp gram, 1 tbsp toor daal, 1/4 tbsp fenugreek. Wash well with water twice and soak in water for 6 hours.

  2. In another bowl add 1/2 cup urad daal. Wash well with water twice and soak in water for 6 hours.

  3. In another bowl take 1/2 cup flattened rice/poha. Wash twice well and soak.

  4. Remove water from the bowl (step 1) and add it to a blender. Add 1/2 cup of water and make a smooth paste of it. Transfer it to a bowl. Now remove water from the bowl (step 2) and add the urad daal, poha (step 3) and 1/4 cup of water in the same blender jar to make a fine paste. Transfer it to another mixing bowl, mix well and rest for 12 hours.

  5. After 12 hours, mix well the batter once. Add salt to taste, pinch of sugar and 1 tbsp of Bombay Rawa. Mix well.

  6. On a moderately hot pan add 1 tbsp oil and spread it with the help of a tissue. Sprinkle a little amount of water on the pan if it's too hot. Pour a ladleful of batter on the pan and spread circularly. After 10 seconds, add and spread 2 tbsp of oil/ghee on the dosa. Now bake the dosa till the sides get golden brown in color.

  7. Finally, add 1 tbsp of red chutney and spread on the dosa. Add potato kurma in the middle of the dosa and Serve hot with chutney.

Recipe Notes

  • Always soak rice and daal separately.
  • Take the required amount of batter only at once and store the rest in the fridge.
