Ingredients

  • 1 cup Maida
  • 2 Eggs or Curd 1/2 cup
  • 1/2 cup sugar
  • 1/2 cup oil
  • 1/2 tbsp Baking powder
  • 1/4 tbsp Baking soda
  • 1/4 cup Buttermilk
  • 1 tbsp Vanilla essence
  • 1 tbsp Red food color
  • 1 tbsp Cocoa Powder

Instructions

  1. Take a mixing bowl. Add 2 eggs or 1/2 cup curd, 1 tbsp vanilla essence and blend well. Add slowly 1/2 cup sugar during blending and make the foam-like batter, add 1/4 cup cooking oil and continue for 1 minute.

  2. Take a bowl and keep a stainer on it. Add 1 cup maida, 1/2 tbsp baking powder, 1/4 tbsp baking soda. Sieve properly to avoid any lumps. Mix well to avoid bubbles if any. Add 1/4 cup buttermilk (or milk), 1 tbsp vanilla essence and mix again for flowing consistency.

  3. Divide the batter between three bowls. Mix the cocoa powder in one bowl and add buttermilk for consistency. Add 1 tbsp red food color in another bowl and keep aside.

  4. Meanwhile, take a cake mold or a bowl. Grease it with oil and dust with maida, so that the cake can be removed perfectly. Add 1 tbsp of cake batter in the bowl. Add the cocoa powder mixed batter in the center and also the red food color mixed batter and make multiple layers so on. Shake to remove bubbles.

  5. Take a frying pan and place a stand in it. Close the lid and preheat for 10 minutes on medium flame.

  6. After 10 mins (step 5), place the cake mold in the frying pan and close the lid. Cook on the low flame for 30 to 40 minutes. If you have an oven, then preheat at 180°C and bake for 25-30 minutes.

  7. After 40 minutes, check whether the cake is baked or not. You can vertically insert a toothpick in the cake. If the batter is non-sticky to your toothpick, then your cake is perfectly cooked. Now allow it to cool for 10 minutes. Remove the cake from the mold using a knife and peel off the butter paper.

  8. Now, cut the spongy zebra cake into slices and serve.
