Ingredients

  • 5 Bitter gourd
  • 2 tbsp dried coconut
  • 2 tbsp roasted groundnuts
  • 2 tbsp roasted sesame seeds
  • 1 tsp red chilli powder
  • 2 tbsp oil
  • 6 garlic cloves
  • 1/4 tsp turmeric powder
  • salt to taste

Instructions

  1. In a jar add roasted peanuts, coconut, roasted sesame, garlic, red chilli powder, turmeric powder, salt to taste then blend smooth
  2. Scrape skin of the bitter gourd
  3. Slit in centre of the bitter gourd. Remove seeds if they are hard, else let it be
  4. Heat 1 tbsp oil in a pan, fry the slitted bitter gourd for 2 to 3 minutes on medium flame, then keep aside to cool
  5. Stuff masala in slitted bitter gourd
  6. Heat 1 tbsp oil in a pan, put stuffed bitter gourd and spread the oil
  7. Cover the lid and fry for 1 minute
  8. Open the lid and turn bitter gourds then cover again for 1 minute
  9. Fry all the sides. Serve as side dish.

Recipe Notes

  • Small and tender bitter gourd cook easily and tastes great.
  • To prevent over burn and bad taste, fry the bitter gourd on low flame.
