Ingredients

  • ½ cup green peas fresh/frozen
  • 3 tbsp ghee/oil
  • 10 cashews
  • 2 bay leaves
  • 2 cardamoms
  • 2 inch cinnamon
  • 2 cloves
  • 1 mace spice
  • 1 star anise
  • 1 green chilli
  • Salt to taste
  • 1 glass(200 grams) basmati rice

Instructions

  1. In a bowl add rice and wash with water 2 times, and then soak rice in water for 15 minutes
  2. In a pressure cooker add ghee and melt it, add all spices and fry for 10 seconds on low flame, then add cashews and fry till they turn golden brown
  3. Now add slit green chillies, fresh frozen peas and fry for a minute
  4. Drain all the water from soaked basmati rice and add saute them gently slowly for 30 seconds, so the pulao will be more tasty
  5. Add 1 and ¼ glasses of water. If you are cooking with normal rice then water must be 1:2 ratio (1 cup rice 2 cups of water). Add salt as required and give a final mix, keep on high flame and wait until water is hot

  6. Now close the lid and cook for 2 whistles
  7. Once the pressure is released itself, open the lid, mix it gently without breaking rice grains
  8. Serve hot with aloo curry or any other curry

Recipe Notes

  • You can use pepper seeds instead of green chilli
