Puliyogare / Pulihora / Tamarind rice is one of the famous rice recipe of India. it tastes sour, sweet and spicy. preparing pulihora powder at home is very easy and it can be made with just few common ingredients which are available at home.

Ingredients

  • 1 tbsp coriander seeds
  • 1 tsp black pepper
  • 1/4 tsp turmeric powder
  • 2 tsp cumin seeds
  • 4 guntur red chillies
  • 4 byadagi red chillies
  • 2 tbsp jaggary
  • 1 tsp mustard seeds
  • ½ tsp methi/fenugreek seeds
  • 1.5 tbsp black sesame seeds
  • ¼ tsp hing/asafoetida
  • 1 big lemon size tamarind
  • 1 tbsp chana dal
  • 2 tsp oil1 tbsp salt

Instructions

  1. Heat a pan and roast cumin seeds for a minute and keep aside
  2. Roast mustard seeds till it splutters and keep aside
  3. Roast fenugreek seeds till it turns brown, then keep aside
  4. Roast chana dal till it turns brown, then keep aside in a plate
  5. Roast sesame seeds for few seconds, then keep aside
  6. Heat 1 tsp oil and roast pepper adding a pinch of hing, fry for 15 to 20 seconds, add red chillies and roast until crisp, add and roast coriander seeds for 20 seconds then keep aside

  7. Heat 1 tsp oil and roast tamarind until it become brittle. Take out and allow it to cool. You need not to be fry tamarind if you dry it in the sunlight.
  8. In a jar grind tamarind and chana dal to coarse texture, take out and keep aside
  9. In the same jar add all the roasted ingredients, turmeric and grind to smooth powder, then add salt, jaggery, all the dry fried ingredients, grinded tamarind powder and blend

  10. Finally add sesame seeds and grind for 5 seconds.

Recipe Notes

  • Store it in a tight container
  • You can add more chillies if you want
