Ingredients

  • 1 cup rice flour
  • 2 tbsp maida
  • ¼ cup roasted gram dal
  • ¼ cup roasted peanut
  • 2 tbsp hot oil
  • 2 tbsp bombay rava
  • 1 tbsp sesame seeds
  • 1 tbsp red chilli powder
  • 1 tsp cumin seeds
  • 1 pinch hing(asafoetida)
  • salt to taste
  • curry leaves few chopped
  • Oil for deep frying
  • water as required to knead

Instructions

  1. In a jar add peanuts, roasted gram dal, cumin seeds grind to coarse powder
  2. Transfer the powder to a large mixing bowl add rice flour, maida, Bombay rava, sesame, curry leaves, chilli powder, salt and hing mix well making sure everything is combined
  3. Add hot oil over the flour for extra crunchiness, mix with the spoon as oil will be too hot
  4. Add water little by little and knead to smooth and soft dough
  5. Grease plastic paper with oil slightly. You can also use butter paper
  6. Take a portion of dough and pat it, cover it and roll the dough slightly thick
  7. Cut in to round shape with the help of glass or cookies cutter
  8. Heat the oil, now deep fry the nippattus in hot oil, fry both sides on medium flame about 1 minute each side. Fry till they turn golden brown
  9. Drain off the nippattus on a kitchen paper to remove excess oil

• Store in a tight container you can enjoy them a whole month long
