- 1 large brinjal(eggplant)
- 2 medium onions chopped
- 1 medium tomato chopped
- Coriader leaves few
- 1 tsp red chilli powder
- 1 green chilli chopped
- 8 crushed garlic
- 2 tbsp oil
- 1 tsp cumin seeds
- Salt to taste
Take a large eggplant place on the stove, roast completely on low flame keep turning in between.
Roast till brinjal shrinks releasing some water, take out and let cool down.
Slowly peel the skin of eggplant and cut the stem.
In a bowl mash it completely and keep aside.
In a pan heat oil and splutter cumin seeds and garlic.
Add onion and green chilles saute for 2 minutes.
Add tomato and saute for a minute then add red chilli powder and salt to taste mix it well.
Now add mashed eggplant and give a nice mix. Cook for 3-4 minutes on low flame.
Finally garnish with few coriander leaves off the stove.
