Ingredients

  • 6 medium size brinjal
  • 1 large size tomato chopped
  • 1 medium size onion chopped
  • 3 tbsp oil
  • ½ cup fresh coconut chopped
  • few coriander leaves
  • few curry leaves
  • 1.5 inch ginger
  • 12 garlic cloves
  • 1 inch cinnamon
  • 2 cloves
  • ¼ tsp turmeric powder
  • 2 tbsp groundnuts
  • 1 tsp niger seeds
  • 1 tbsp red chilli powder
  • 1 tsp coriander powders
  • 1.5 cup water
  • salt to taste

Instructions

  1. Heat a pan add groundnuts and roast for 30 seconds, then add niger seeds and roast until it splutters, keep on medium flame
  2. In a jar add roasted ingredients, fresh coconut, ginger, garlic, cinnamon, cloves, coriander leaves, ¼ cup of water and blend to smooth paste
  3. Cut ‘x’ shape in the middle of the brinjal backside, and keep them in water
  4. In a mixing bowl, add blended masala, red chilli powder, coriander powder, turmeric
  5. Stuff masala in four sides of the brinjal.
  6. Stuff all brinjals with masala
  7. Heat oil in a pan add onion, curry leaves saute for a minute on medium flame
  8. Now add stuffed brinjals and mix well, fry for 2 minutes, stir occasionally
  9. Add remaining masala and mix well, cover the lid and fry for a minute. Open the lid and add 1.25 cup of water, mix well cover the lid and simmer for 2 minutes
  10. Add tomato and mix, cover the lid till the tomato will be soft, then turn of the flame, and serve with roti, chapati & rice

Recipe Notes

  • You can also use roasted peanuts powder instead of grated coconut.
  • Take small and tender brinjal for easy and uniform cooking.
