Ingredients

  • 2 tbsp oil
  • 2 tbsp ghee
  • 1 cup curd/yogurt
  • ¼ cup mint leaves
  • 1/2 cup onion chopped
  • ¼ cup mint and coriander leaves
  • 1 cup wheat dough to seal
  • ½ cup carrot chopped
  • ½ cup gobi chopped
  • ½ cup beans chopped
  • 4 cloves
  • 2 cardamoms
  • 2 bay leaves
  • 2 inch cinnamon
  • ¼ tsp pepper
  • 1 star anise
  • 1 mace
  • ½ cup potato chopped
  • ¼ cup peas
  • 2 green chillies
  • 1 cup basmati rice soak 20 minutes
  • ½ tsp turmeric powder
  • 2 tsp biryani masala powder
  • 1 tsp garam masala
  • 1 tsp cumin seeds
  • 1 tbsp red chilli powder
  • 1 tbsp ginger garlic paste
  • 15 paneer pieces
  • ½ cup fried onions
  • 2 tsp food colour yellow
  • salt to taste

Instructions

  1. In a large vessel pour 6 cups of water and add all the spices, salt, few drops of oil cover the lid and boil
  2. Now add soaked rice and stir well and cover the lid, boil till the rice is almost cooked. Do not cook the rice completely, as it will get cooked in dum
  3. Drain off the water from almost cooked rice and rinse with cold water to stop the cooking process, keep aside

Gravy:

  1. In a large kadai heat 2 tbsp oil and 1 tbsp ghee then add cumin, onions and saute well, add 1 tbsp ginger garlic paste and mix well
  2. Now add all the vegetables and saute for 2 minutes
  3. Add curd, garam masala, turmeric, chilli powder, 1 tsp biryani masala powder, salt and stir well, saute on low flame else curd might curdle, then add coriander and mint leaves, mix well. 

  4. Add 1 cup of water and cover the lid, cook for 10 minutes on medium flame.

  5. Add green chillies and cook for a minute, now add paneer cubes and mix well, turn off the flame, keep aside. gravy is ready

Dum:

  1. In a deep kadai spread in a layer of prepared gravy, further layer with cooked rice as a third layer spread again prepared gravy
  2. Repeat layer with cooked rice, on that spread mint leaves, food colour, 1 tsp ghee, also biriyani masala, fried onions
  3. Now close the lid and seal with wheat dough, keep on medium flame, cook for 10 minutes
  4. Now place fry pan on the stove, on that keep kadai, again cook for 10 minutes on low flame. Open the seal and serve hot
